I found this along with the porridge recipe. It is perfect for this time of year. It comes from a cookbook from a local restaurant. It makes a LOT of soup.


-30g dried porcinis
-2C Boiling water
-8C Veg stock
-2 Red potatoes
-4 Bay leaves
-2 tbsp butter
2 tbsp Olive oil
-1 1/2 lbs button mushrooms
-1/2 lb ****ake or portobellos
I can't believe the program edited this! Shi-take mushrooms

-2 tsp salt
-3 leeks (white part only)
-2 Carrots
-2 Celery stalks
-8 Cloves Garlic
-1/2 tsp pepper
1 tbsp thyme leaves
-1 Cup white wine
1 cup heavy cream
juice of 1 lemon

1) Soak porcinis for an hour in boiling water. Add liquid to stock. Chop
mushrooms, set aside.

2) Combine stock, diced potatoes & bay leaves in a pot and bring to simmer.
Cook till potatoes are done. turn off heat, cover, set aside.

3) Heat a soup pot over med-high heat and add butter & oil. Add all
mushrooms and 1 tsp salt. Stir to coat and cover pan for 5 mins to let
mushrooms cook. Uncover and let the mushrooms sear and juices evaporate.
Stir in leeks, carrot, celery, garlic, pepper, thyme and rest of salt. Cook
for 10 mins. Deglaze pan with wine and reduce liquid by half.

4) Add stock to the pot and bring to a boil. Reduce heat and simmer for 20
mins. Remove bay leaves and puree soup until smooth. Stir in the cream and
reheat just before serving. Season with lemon juice, S + P to taste.

that looks so yummy! i just found a source for chanterelle mushrooms which go great with porchini and cremini ('baby portabellos'). this looks wonderful.

Hey Tourist....what's with the $hitake mushrooms.....does this forum actually think we are talking $hit or what??? I'm surprised you being a moderator and all, that you don't have more powers to over ride that little issue,

Thanks for the recipe. BTW, I haven't tried using organic white wine in my cooking, but I sure did use Frey's Syrah red wine in my marinara sauce the other day...it was Excellent - no sufflites!! Now I have a white wine recipe to try. My sister and I share mushrooms from the local farm in her area. We split them because there are sooo many - they sell them in bulk only for sooo cheap! Soo, not this weekend but next, I'm planning a trip to the mushroom farm.

I thought about editing it but it was so funny I left it. What the he!!? It is right in the middle of a word....

Oh, and I forgot to say this is awesome soup. Absolutely amazing. And the recipe is just right - everything timed out exactly as it said. OK, now I am hungry...

My guess is hell has to be allowed for the philosophy and religion thread. Hell is a concept, right? Though they probably don't have yummy mushroom soup there.
