I haven't got any recipes that are really good for you, but this one really hits the spot:
400g Rhurarb
200g caster sugar
150g butter, softened
75g self-raising flour
100g ground almonds
25g flaked almonds
Half tsp baking powder
2 medium size eggs
Grated rind one medium orange
2 Tablespoons orange juice
Base line a 23cm cake tin with removable sides. heat oven to 200 degrees centigrade.
Chp the rhubarb into small 2cm pieces, put in bowl with 50g of the sugar. Whisk the butter and remaining sugar into a cream. Whisk the eggs lightly, and then whisk into the butter mixture.
With a metal spoon, fold in the flour, baking powder, and ground almonds. Add the finely grated zest of one orange, and two tablespoons of orange juice. The rhubarb should have been stirred occasionally (wash it first so its slightly wet) and after half an hour you should have a syrup. Pour the rhubarb and its syrup into the cake mix. Cover with almonds. Put in oven for 25 mins, and then reduce heat to 180 centigrade, and cook for a further 20-25 mins). Serve with cream or custard. Absolutely yummy, wont do your diet any good, but its all the better for it.
